Skillet Zucchini Creole

  

Quantity: 7 servings

Ingredients:

1 tablespoon water
4 cups zucchini, washed and sliced
1 cup onion, sliced
2 tomatoes, washed and sliced
1 green pepper, washed and sliced
1/8 teaspoon pepper

Instructions:

1. Wash and slice vegetables.

2. Heat water in frying pan over medium heat. Add zucchini, onion, tomatoes, green pepper, and spices. Stir.

3. Cook covered for about 10 minutes until tender. Serve.
