1/2 cup whole-wheat pasta, uncooked
1 16-ounce package frozen mixed vegetables
2 cups low-sodium vegetable broth
1 15.5-ounce can kidney beans, rinsed and drained
1 16-ounce can tomatoes
2 tablespoons parsley, chopped
1 teaspoon Italian seasoning
1/4 teaspoon pepper
1. Cook pasta in boiling water for 10 minutes. Drain.
2. Meanwhile, cook vegetables in broth 15 minutes or until tender.
3. Add beans, tomatoes, seasonings, and pasta.
