Roasted Cherry Tomatoes



1 pint cherry tomatoes
1 clove garlic, sliced
1 tablespoon olive oil
1 tablespoon balsamic vinegar
6 basil leaves, torn into small pieces


Yield 2 servings

Preheat oven to 400 degrees F. Combine all ingredients except basil in a roasting pan. Roast for 15 minutes, stir every 5 minutes. Spoon tomatoes into a bowl and toss in basil pieces. Pour the liquid into a saucepan and heat to reduce and thicken. Drizzle over tomatoes and basil.
