Apple and Spinach Salad



1 tablespoon of lemon juice
2 teaspoons honey
1 large Jonathan apple, quartered, cored and sliced thin
2 cups baby spinach
1/2 cup walnuts, toasted (optional)
1/2 cup goat or feta cheese, crumbled (optional)


  1. In a small bowl, whisk lemon juice and honey to blend.
  2. In a large bowl, combine apple and spinach. Toss with enough dressing to coat.
  3. Mound salad on 4 plates. Sprinkle with walnuts and cheese (optional).
