Onions-Bell Pepper Roasted Potatoes

8 small potatoes (2 1/2 pounds), unpeeled
1 small onion, halved lengthwise and sliced thin
1 small green pepper, cut into 2 1/2- by 1/4-inch strips
2 tablespoons low-calorie margarine, melted


Cut crosswise but not through each potato to make slits every inch. Gently insert onion slices and pepper slices alternately into slits. Brush with melted butter or margarine. Bake at 425 degrees F for 45 minutes.
