Crispy Okra Circles



6 servings

2 tablespoons bread crumbs
3 tablespoons Parmesan cheese, grated
1 tablespoon cornmeal
3 cups okra, sliced
1/4 cup olive oil
2 garlic cloves, minced


Mix the bread crumbs, cheese and cornmeal. Add the okra and stir to coat. Heat the olive oil, then saute the okra and garlic for 5 to 10 minutes. Most of the roping should disappear and the okra should be tender.
