Leaf Lettuce with Roasted Pear and Walnuts

4 pears, peeled, cored and cut into 10 lengthwise slices
1 tablespoon butter, melted
2 tablespoons sugar
1 1/2 tablespoons olive oil
2 teaspoons white wine vinegar
2 pounds of lettuce, washed and torn into small pieces
4 ounces Parmesan cheese, sliced into thin strips
1 cup walnuts, chopped


  1. Preheat oven to 450 degrees F. Place baking sheet in oven to preheat.
  2. Toss pears with butter. Add sugar and toss again. On preheated baking sheet, spread pears in single layer, making sure each slice lies flat on surface. Roast until browned on bottom, about 10 minutes.
  3. Turn each slice and roast until tender and deep golden brown, about 5 minutes. Let pears cool while preparing salad.
  4. Whisk together oil and vinegar to make vinaigrette dressing. Combine lettuce, pears and Parmesan. Add vinaigrette dressing and toss gently to combine. Sprinkle with chopped walnuts.
