Cauliflower Casserole

5 tablespoons olive oil
3 tablespoons flour
1 1/2 cups milk, warmed
1 teaspoon nutmeg
1/2 cup Parmesan cheese, grated
1 cauliflower (2 pounds), cored and broken into florets
2 eggs, beaten


Preheat oven to 350 degrees F. Brush a baking pan with olive oil. Heat 4 tablespoons of olive oil. Add flour and stir well. Remove from heat and gently add warm milk. Return to low heat and stir with a spatula until thick. Add nutmeg and 2 tablespoons of grated cheese. Mix the cauliflower, eggs, white sauce and half the cheese. Pour the mixture into the baking pan and sprinkle the remaining cheese on top. Bake until the cauliflower is tender and the top turns golden.
