Mashed Cauliflower and Potatoes

2 pounds potatoes, cubed (leave the skins on)
1 head cauliflower, chopped
1/4 cup olive oil
1/4 cup skim milk
1/2 cup reduced- or fat-free sour cream
4 cloves garlic, roasted and removed from skin


In a large pan, combine cauliflower and potatoes. Cover with water and boil. Reduce heat and simmer for 10 to 15 minutes or until vegetables are tender. Drain water. Mash cauliflower and potatoes together. Add olive oil, milk, sour cream and garlic. Continue to combine ingredients. Mix well.
