Roasted Carrots



12 carrots, cut into 1 1/2-inch slices
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoon parsley, minced


Yield 6 servings

Preheat oven to 400 degrees F. Mix together olive oil, salt, pepper and parsley. Toss with carrot slices. Place in single layer on a baking sheet. Roast for 20 minutes or until brown and tender.
