Cabbage Soup



6 servings

1 cabbage, shredded
1 onion, chopped
2 carrots, sliced
1 potato, diced
1 cup green beans, cut
3 fresh basil leaves or 1/4 teaspoon dried basil
1 1/2 cups boiling water
2 tomatoes, chopped


Add all ingredients except tomatoes to boiling water. Cover and boil gently for 15 minutes. Add tomatoes to vegetable mixture. Continue cooking until vegetables are tender, about 20 minutes. Serve with grated Parmesan cheese.
