Beet and Cabbage Slaw



4 servings

2 medium beets, trimmed, peeled and grated
4 cups cabbage, grated
1/2 cup walnuts, chopped
3 tablespoons cider vinegar
2 teaspoons Dijon mustard
1 teaspoon honey
5 tablespoons olive oil


Mix together vinegar, mustard and honey. Whisk in olive oil. Pour dressing over grated beets and cabbage, toss. Sprinkle walnuts on top.
