Refrigerator Pickled Beets



4 to 6 beets (1 bunch) - greens removed
1/4 cup cider vinegar
1 tablespoon sugar
1 tablespoon olive oil
1/2 teaspoon dry mustard
Salt and pepper


Boil beets for 30 minutes or until a fork can easily pierce beets. Drain liquid from beets and rinse in cold water. Remove beet peels with fingers. Mix cider vinegar, sugar, olive oil and dry mustard. Add salt and pepper to taste. Combine beets and marinade. Let mixture set for 30 minutes at room temperature.
