Frozen Tomato Juice



1. Wash, sort and trim firm, vine-ripened tomatoes.

2. Cut in quarters or eighths.

3. Simmer 5 to 10 minutes.

4. Press through a sieve.

5. If desired, season with 1 teaspoon salt to each quart of juice.

6. Pour into containers, leaving headspace. Seal and freeze.
