Spiced Green Tomatoes

Quality: Small green plum tomatoes are suitable for this pickle.

6 pounds small whole green tomatoes
9 cups sugar
1 pint cider vinegar (5%)
2 sticks cinnamon
1 tablespoon whole cloves
1 tablespoon whole allspice
1 tablespoon whole mace or ½ tablespoon ground mace


1. Wash and rinse canning jars; keep hot until ready to use. Prepare lids according to manufacturer’s directions.

2.  Wash tomatoes and dip in boiling water for 30 to 60 seconds or until skins split. Dip in cold water and slip off skins.

3. Make a syrup of the sugar, vinegar and spices. Drop in the whole tomatoes and boil until they become clear.

4. Pack tomatoes into hot jars, leaving ½-inch headspace.

5. Strain syrup and cover tomatoes with the syrup, again leaving ½-inch headspace.

6. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened clean paper towel; adjust two-piece metal canning lids.

7. Process in a Boiling Water Canner according to the recommendations. Let cool, undisturbed, 12-24 hours and check for seals.
