Selection: Coconuts that are heavy for their size. Avoid selecting those that are molded or have soft spots on the "eyes." When shaking the coconut, you may be able to hear liquid that is inside.

Storing: Unopened coconuts can be stored at room temperature for up to 2 months. Once opened, coconut can be kept refrigerated in a plastic bag for up to 1 week.
