Chicken Club Salad

  

Ingredients:

1 cupuncooked whole wheat small pasta (macaroni or rotelle)
6 cupsromaine lettuce or spinach, torn into pieces
2 cupschopped fresh vegetables (green pepper, celery, cauliflower, cucumber, carrots)
2 cupstomatoes, chopped (about 2 large)
1 1/2 cupscubed cooked skinless chicken (about 1/2 pound)
1/2 cuplow fat Italian dressing
1hard cooked egg (optional)
1/4 cupcheese, shredded

Instructions:

  1. Cook pasta according to package directions. Drain and cool.
  2. Place 1 1/2 cups romaine in each of 4 large bowls or plates.
  3. Combine pasta, chopped vegetables, and chicken.
  4. Add dressing to pasta, vegetables, and chicken. Toss lightly to coat. Divide evenly among the 4 bowls.
  5. Top each serving with a few egg slices, if desired, and 1 tablespoon shredded cheese.
