Creamy Egg Salad Sandwich

  

Ingredients:

6 large hard cooked eggs
1/4 cuplight mayonnaise or salad dressing
1 1/2 teaspoonsprepared mustard
1 1/2 teaspoonssweet pickle relish
1/2 cupcelery (chopped finely)
1 dashsalt
1/8 teaspoonground black pepper
4whole wheat English muffins

Instructions:

  1. Prepare hard cooked eggs.
  2. Crack and peel the eggs; chop coarsely and place in a large mixing bowl.
  3. Add mayonnaise, mustard, relish, and celery. Mash together.
  4. Season with salt and pepper.
  5. Serve on toasted English muffins, whole wheat bread, or crackers.
