Description: Parsnips provide vitamin C, an antioxidant that may reduce your risk of heart disease and certain cancers. Eating foods with folate before pregnancy helps lower the risk of delivering a baby with neural tube defects.

Selection: Parsnips that are firm and dry without any pits.

Storing: Refrigerate in a plastic bag for 3 weeks or more.
