Description: Also known as Sunchokes, Jerusalem artichokes provide iron, which is a mineral needed to help make part of blood cells and carry oxygen through the blood. Jerusalem artichokes also provide vitamin B1 and fiber. Vitamin B1, thiamin, is necessary for various metabolic processes to occur in the body. Fiber helps control cholesterol and keeps you regular.

Selection: Firm artichokes without mold, soft spots, blemishes or cuts.

Storing: Refrigerate in plastic bags for up to 1 week.
