Description: Hubbard squash provides an excellent source of vitamin A and C, which are antioxidants that may reduce your risk of heart disease and certain cancers. Vitamin A helps maintain eye health. Vitamin C helps protect skin from bruising, helps heal cuts and keeps gums healthy. Eating foods with vitamin C boosts absorption of iron. Hubbard squash also provides potassium and fiber. Potassium helps maintain healthy blood pressure, and fiber helps control cholesterol and keeps bowel movements regular.
Selection: Squash with a deep color and that is heave for its size. Choose squash with smooth, dry and dull rind free of cracks and soft spots. Stem should be firm, rounded and dry.
Storing: In a cool, dry place for up to 3 months.
