Description: Horseradish is an excellent source of fiber, which helps control cholesterol and keeps bowel movements regular.

Selection: Roots that are similarly shaped and well-formed. Avoid those with soft spots and bruises.

Storing: Wrap in damp paper towel, and place in plastic bag. Refrigerate for several weeks.
