Description: Brussels sprouts are an excellent source of vitamin C and K. Vitamin C is an antioxidant that may reduce your risk of heart disease and certain cancers. Vitamin C helps protect skin from bruising, helps heal cuts and keeps gums healthy. Eating foods with vitamin C helps the body absorb iron. Vitamin K helps build and maintain strong bones. Brussels sprouts also provide vitamin A, potassium, fiber and folate. Vitamin A helps maintain eye health, potassium helps maintain healthy blood pressure and fiber helps control cholesterol and keeps you regular. Folate may reduce your risk of heart disease. Eating foods with folate before pregnancy helps lower the risk of delivering a baby with neural tube defects.

Selection: Select firm and compact brussels sprouts with a bright green head. When possible, buy on stalk.

Storing: Refrigerate in a plastic bag for up to 1 week.
