Description: Sweet potatoes are a source of vitamin A, an antioxidant that may reduce your risk of heart disease and certain cancers. Vitamin A also helps maintain eye health. Sweet potatoes provide potassium, magnesium and fiber. Potassium helps maintain healthy blood pressure, magnesium helps build and maintain strong bones, and fiber helps control cholesterol and keeps you regular.

Selection: Choose firm potatoes with smooth, unbruised skins without cracks.

Storing: In a cool, dark place for 1 to 2 weeks.

Preparation: Rub while washing under cool running water. Peel before cooking or scoop out of the peel after baking.

Serving: Bake whole, unpeeled sweet potatoes and serve with butter. Boil sweet potatoes with white or red potatoes, mash and season with ginger and cinnamon.
