Description: Onions provide potassium and magnesium. Potassium helps maintain healthy blood pressure, and magnesium helps build and maintain strong bones. Why onions make you cry: Sulfer compounds in onions release vapors which cause your eyes to water to wash away the irritant. Yellow onions have a higher sulfer content and make you cry more than milder varieties like white and red onions.

Selection: Choose onions that are firm and have a hard, dry skin.

Storing: Onions should be stored in a cool, dry, dark place.

Preparation: Onions can be eaten raw or added to any recipe to add flavor.

Serving: To make sweet dark brown caramelized onions, cook thin slices of yellow onion with a pinch of salt in olive oil over medium heat. Stir and add a small amount of water to prevent sticking.
